We have a long tradition of Sunday brunch at this house. Now that time has passed, add in the sport of competitive swimming with appetites like locusts. Locusts, I tell you, and suddenly ten waffles are never enough.
You think your teenager eats a ton? I'm right there with y'all now.
I just cannot keep enough food on the table. Yep, our family of five usually requires TRIPLE batches of pancakes, waffles, and French toast. We will not count the quarts of syrup all under the auspices of carb-loading. Add into that equation that the pool my kids compete at has an IHOP right down the street. Finally, the invention of something you might know as Eggo waffles which my kids call snarf-down-as-many-as-you-can-fit-in-your-mouth-waffles until they are gone, just add to the ridiculous nature of mothering kidlets. A box usually lasts about an hour upon discovery in our freezer. Soooo you do the math.
Yep, my kids blood supply is half syrup on the weekends!
Speaking of syrup, I cannot tell you how thrilled my kids were when this showed up on our doorstep:
Suddenly, this mom was getting a lot more RESPECT around the Scouty household. My kids mostly think I "play" on my laptop all day. However, getting these goodies in the mail highly upgraded my status to "Queen of the Syrup."

Yep, our very own briefcase of syrup from the IHOP at Home? collection. Yes, yummy IHOP goodness.
So when we got the briefcase mid-week, our Sunday brunch plan was blown to bits. No WAY were we waiting DAYS to use it.
Can we say breakfast for dinner night? However, this was no frozen waffle night. This was fluffy, homemade pancakes night.
My husband was the pancake chef, and the kids were impressed with a meal of scrambled eggs, warm buttery hot cakes, and, of course, loads of sticky, sweet doses of IHOP at Home? Original syrup for dinner. Yum! The kids were super excited!
Brinner! Brinner, my friends, on the night I had no idea what to cook, and it was my turn to drive the swim carpool. Snap!
Even better? I left my husband with syrup collection, spatula, and pleading to make us brinner, and I was set!
Ummm hello? Anyone else getting ideas that most of our husbands can make pancakes? Put'em to work!
Seriously, my husband loves to cook, so it was not a hard negotiation. I know, I know, I'm lucky! I still think my pancakes are better, but shhhh, don't tell him. I don't want my brinner chef to go on strike!
Continuing the brinner theme, my teen son got into the act this week-end and made some rather inspired early St. Patrick's Day hotcakes for the family:
